At the table
Assess: Check the actual sweetness, acidity and concentration: a sweet Cérons can range in richness and maturity. Look for balance before describing it as a smaller or lighter version of Sauternes.
Pair: Try blue cheese, pan-seared foie gras, or duck with a restrained spice glaze. For dessert, choose fruit and moderate sweetness rather than a preparation that overpowers the wine.
Service: Start around 8–10°C and offer a measured 70–90 ml pour. Let the aromas develop in the glass and decide any aeration from the bottle’s condition rather than from the appellation alone.
