Place & climate

  • Location: South/left-bank side of the Loire near Blois, in the Sologne landscape.
  • Soils: Sandy and clay-rich soils with varied sedimentary and river materials.
  • Identity: A blending appellation for white, red and rosé.

Grapes & table

  • White: Sauvignon-led blends, with Chardonnay and/or Menu Pineau among the partners.
  • Red / rosé: Pinot Noir and Gamay are central references.
  • Contrast: Cour-Cheverny is a separate Romorantin white appellation, not a higher tier of Cheverny.
  • Assess: Use colour and blend to separate Sauvignon-led freshness from a supple Pinot–Gamay red; judge whether the wine can carry cream or needs a lighter jus.
  • Pair: White with a goat-cheese and courgette tart has acidity to refresh the pastry. Red with roast chicken and light mushroom jus supports fruit without a heavy reduction; rosé with pork terrine and a modest herb mayonnaise suits a picnic.
  • Service: Start reds at 13–15°C and whites or rosés at 9–11°C. Let an expressive wine open in the glass; carafe only a robust, closed red. A mature bottle with sediment needs a gentle decant close to service.
