Defining estates and collectives
Desprat Saint-Verny
- Wine winters in a buron: Pierre Desprat imagined a mountain gathering around ‘La Légendaire’, dedicated to his grandfather Jean. The cuvée spends several months in bottle in a buron in Cantal, at an altitude of 1,200 metres.
- The descent becomes a celebration: In spring, leaving this mountain cellar becomes a collective event: participants form a human chain and pass the cases from hand to hand. The wine’s winter stay thus gives rise to a celebration when it is brought back down.
- A Chardonnay aged in two stages: The white version of ‘La Légendaire’ is a Chardonnay from Côtes d’Auvergne: twelve months in barrel precede six months in the buron. Round, it recalls pear and ends on a fresh finish.
