Maison Celene - héritage Ballarin
- A venture with Spanish roots: Michel Ballarin left Spain and settled in Haux, where he began making sparkling wines in 1947.
- From Ballarin to Celene: His grandson Jean-Louis developed bottled-wine sales and later contributed to the recognition of Crémant de Bordeaux. After its acquisition by Vignobles Lannoye in 2015, the house took the name Celene.
- The Ballarin legacy in a rosé crémant: This sparkling-wine heritage continues notably with “Saphir Rosé Brut”, a Crémant de Bordeaux made from Merlot and Cabernet Franc. After eighteen months of bottle ageing, it is broad on the palate, with fine bubbles and grapefruit and citrus notes.
