Place & identity

  • Location: West of Libourne around the Isle–Dordogne confluence, with limestone and clay hillsides.
  • Grapes: Merlot commonly leads, supported by the Cabernets.
  • Origin: Fronsac and Canon-Fronsac are separate AOCs; Canon is not a château rank.

At the table

  • Assess: Assess the ripe fruit, grip and freshness of the Merlot-led blend. A rounded palate can still finish firmly, so judge tannin in the glass rather than from the hillside or soil name.
  • Pair: A slow-cooked beef daube or duck confit can suit a firm example. A mature, savoury wine can also accompany veal or poultry with morels.
  • Service: Start around 16–18°C. Taste before aerating and follow the wine’s response; if a mature bottle has sediment, separate it gently close to service.
