From the Andes towards Peumo

  • Location: South of Maipo, Cachapoal forms the northern part of Rapel. Eastern foothills and the more sheltered western interior offer different ripening conditions.
  • Peumo: Peumo is especially associated with Carménère. A long growing season and moisture-retaining soils in documented vineyards help this late-ripening variety reach balance.

Carménère with context

  • Style: Dark plum, spice and herbal detail can meet a broad, supple palate. Picking date and extraction affect the balance; green pepper is not compulsory in every wine.
  • Broader range: Cabernet Sauvignon, Merlot and Syrah also matter. A Cachapoal label does not mean 100% Carménère or identify the Peumo area automatically.

At the table

  • Carménère: Offer a dry, supple Carménère with lamb, roasted peppers and herbs; the savoury preparation works with its plum fruit and herbal spice.
  • Cabernet Sauvignon: A firmer Cabernet suits steak or a beef-and-mushroom braise, with enough richness to balance the tannin.
  • Service: Serve these reds around 16–18°C. Taste young structured examples before decanting; handle an older bottle with sediment gently.
