Place & climate

  • Location: The varied Corbières massif in Aude, south of the Aude River and opening towards the Mediterranean.
  • Climate: Mediterranean overall, with coastal moderation and stronger inland or oceanic influences in some sectors.
  • Soils & slopes: Limestone and clay-limestone, schist, sandstone and stony terraces occur across the area.

Grapes & label

  • Colours: Mostly red, with rosé and white also authorised; all three colours are blended wines.
  • Red anchors: Carignan, Syrah, Grenache and Mourvèdre are principal learning references.
  • Rosé: Cinsault and Grenache Gris add useful rosé associations.
  • White: Grenache Blanc, Roussanne, Marsanne, Vermentino and Bourboulenc are useful anchors; Macabeu is also permitted.
  • Blending: At least two varieties, including a principal variety; precise proportions depend on the applicable specification and any harvest-specific exceptions.

Wine styles

  • Red: Styles span fruit-led drinking and more powerful, structured wines capable of development.
  • Other colours: Rosé provides a fresher fruit-led option; dry whites vary in aromatic intensity and texture.
  • Range: Blend, extraction and ageing shape body and tannin; origin alone does not set one uniform style.

At the table

  • Red: Beef daube, lamb with olives or cassoulet suits a substantial blend.
  • Supple red: Roast pork or mushroom pie needs less tannin and extraction than a rich stew.
  • White & rosé: White with grilled sea bass; rosé with prawns or herb-roasted vegetables.
  • Cheese: Cantal or Ossau-Iraty with red; young Comté with white.
  • Service: Reds around 15–17°C; whites and rosés around 9–12°C.
