Essential references

Château Ollieux Romanis

  • A cellar built into the slope: At Ollieux Romanis, the 2021 renovation preserved the nineteenth-century building and its gravity-flow system. This uses the height difference to move grapes or wine: vinification takes place on the upper floor and storage below.
  • Springs to temper the cellar: The estate’s springs also continue to serve the cellar. Their water helps regulate the temperature of the space where the barrels rest. The new equipment therefore draws on two resources already present: the slope and water.
  • ‘Atal Sia’ 2023, aged in tank: ‘Atal Sia’ 2023 provides a tangible reference: this Boutenac red blends old-vine Carignan, Grenache and Mourvèdre. Aged in tank, it is described by Tom Cannavan as crunchy and creamy.
