Clos Sainte Magdeleine
- A water tank’s second life: At Clos Sainte Magdeleine, an old water tank was converted into a cellar to accommodate jars and demi-muids, large wooden casks. The estate thus adapts an existing building to its fermentation and ageing vessels.
- Vessels chosen according to the wines: The Art Deco house has belonged to the family for four generations. The vessels vary with the wines: egg-shaped concrete tanks for « Bel-Arme », and jars for other IGP cuvées.
- The role of lees in texture: For « Bel-Arme », the estate explains that the natural movement of lees in concrete contributes to the white’s depth and texture.
