- Planting before having a cellar: Simón and Noelia began without vines or a cellar, then planted their own hillside beside the Verdugo. Their first harvest in 2016 gave birth to a new house in the small Soutomaior subzone.
- One vineyard for all the wines: All their wines come from Candán, the vineyard they planted. ‘Noelia Bebelia Albariño’ is its pure Albariño expression, made by direct pressing.
- Fruit and a hint of bitterness: ‘Noelia Bebelia Albariño’ 2023: apricot, peach, white flowers and fennel; a broad entry and light bitterness on the finish.
