Place & identity

  • Location: On the right bank of the Garonne, south-east of Bordeaux.
  • Style: Sweet white wine, distinct from the red wines made in the broader district.
  • Grapes: Sémillon, Sauvignon and Muscadelle are key references.

Hierarchy & style

  • Production: Overripe and often botrytised grapes are selected in successive harvest passes.
  • Taste tendency: Concentrated fruit and sweetness with balancing acidity; richness varies by wine.
  • Label distinction: Cadillac alone is sweet white; Cadillac Côtes de Bordeaux is red.

At the table

  • Assess: Confirm Cadillac alone: this is sweet white, unlike red Cadillac Côtes de Bordeaux. Assess sweetness, freshness and concentration together rather than treating all sweet Bordeaux as equally rich.
  • Pair: Try foie gras, blue cheese or duck with Asian spices. A fruit-based dessert can also work if it is no sweeter than the wine.
  • Service: Start around 8–10°C with a measured 70–90 ml pour. Let the wine open in the glass; judge any need for air from the actual bottle, not from sweetness alone.
