Place & climate

  • Location: Seven communes in the hills north of Béziers, against the Faugères mountains.
  • Climate: Mediterranean, with elevation and hillside exposure changing local conditions.
  • Soils & slopes: Schist is the defining geological reference; fractures, depth and water supply matter more than a supposed rock flavour.

Grapes & label

  • Red & rosé: Syrah, Grenache, Mourvèdre, Carignan and Cinsault are familiar references.
  • White: Roussanne, Grenache Blanc, Marsanne and Vermentino/Rolle are principal white anchors.
  • Colours: The appellation includes red, rosé and white; its red reputation does not prohibit white wine.
  • Red: Styles range with blending, extraction and ageing; ripe fruit and spice are useful possibilities, not fixed outcomes.
  • White & rosé: White can offer breadth and aromatic complexity; rosé gives a fresher fruit-led contrast.

At the table

  • Red: Pork shoulder with herbs or lamb stew suits ripe fruit and savoury spice.
  • White: Roast chicken, mushroom tart or fish with almond butter suits a rounded, textured style.
  • Rosé: Grilled prawns or stuffed vegetables suits fresh, dry fruit.
  • Cheese: Cantal or Tomme de brebis with red; Comté with white.
  • Service: Reds around 15–17°C; whites and rosés around 10–12°C.
