Liqueurs & aperitifs

How liqueurs are made

Two service terms

2 / 2
01

Triple sec

  • a family of orange liqueurs, often clear, illustrated by Cointreau.
  • Do not interpret triple as three mandatory distillations or sec as no sugar: the name alone does not guarantee a precise process.
02

Frappé

  • in liqueur service, very cold service over crushed or finely broken ice.
  • Do not confuse it with shaking in a shaker.
  • Cold reduces some sensations while melting ice progressively dilutes the drink.

Identify the base, dominant flavour and sugar before choosing how to serve it.
