Aligoté
A Burgundy white variety whose brisk acidity and modest perfume can yield refreshing young wines or more substantial, carefully farmed and aged examples. It is useful to taste without crème de cassis before judging its character.
Aromatic palette
lemon · green apple · white flowers · fresh herbs · subtle nutty development
Read the structure.
What could you confuse it with?
Melon, Chablis and Romorantin overlap. Evaluate aromatic restraint, acidity and texture together; a high acid reading alone is insufficient.
Origins & family
Origin
Burgundy, France.
Family
A natural Pinot × Gouais Blanc crossing. Chardonnay, Gamay, Aligoté and Melon belong to this group of sibling varieties.
In the vineyard
A fertile variety adapted to northern vineyards. Uneven berry development may occur, and susceptibility to downy mildew and grey rot influences vineyard work.
Growing season
Early budbreak and ripening suit northern vineyards. Uneven berry set can affect bunches.
Vineyard sensitivities
Susceptible to downy mildew and grey rot; less affected by powdery mildew.

Winemaking & development
Tank or neutral wood can preserve a crisp outline; lees ageing adds texture. Producer, vine material and crop balance can matter more than the grape’s inexpensive reputation suggests.
Service & ageing
8–11°C for simple fresh wines, 10–12°C for more textured bottles. Avoid assuming all Aligoté must be consumed immediately.
Pairing logic
Useful with oysters, fried fish, goat cheese and dishes that benefit from a fresh counterpoint. Richer examples can handle butter sauces.
Aligoté: a change of reputation
- Beyond kir: Long overshadowed by Chardonnay and associated with kir, Aligoté is being rediscovered as a serious dry white in its own right.
- A collective revival: Les Aligoteurs brought growers together in 2018, with Sylvain Pataille, Pablo Chevrot and Laurent Fournier championing Aligoté’s range of expressions.
- Village recognition: Bouzeron gives Aligoté its own Village appellation, offering a distinct identity alongside the regional Bourgogne Aligoté.
- Bouzeron to explore: Domaine de Villaine’s Bouzeron 2024 offers an Aligoté Doré reference: the estate describes floral freshness, rounded fruit and a gently bitter finish.
- A longstanding exception: Domaine Ponsot’s Morey-Saint-Denis Premier Cru Clos des Monts-Luisants is 100% Aligoté, retaining vines planted in 1911: ambition predates today’s revival.
